A delicious high-fiber muffin with moist peaches. You can substitute any type of fruit you want, fresh, canned or frozen!

Recipe Ingredients for Peach Muffins

1/4 cup flour
1/4 cup whole wheat flour
1 3/4 cup oatmeal
1/3 cup brown sugar
1 tbsp baking powder
1/2 tsp salt
3/4 cups skim milk
2 eggs
1/4 cup unsweetened apple sauce
2 tbsp vanilla
2 cups peaches, fresh or canned, chopped
1 tbsp ground cinnamon
1 tbsp splenda

Recipe Directions for Peach Muffins

  1. Preheat oven at 375.

  2. Mix flour, oatmeal, brown sugar, baking powder, and salt in a large bowl.

  3. Mix skim milk, eggs, and apple sauce with a fork in a small bowl.

  4. Blend 2 mixtures together in the large bowl.

  5. Fold in fruit.

  6. Pour an equal amount of batter into each muffin pan cup (lined with paper baking cups); each should be 2/3-3/4 full.

  7. For topping, mix splenda and cinnamon and sprinkle evenly over muffins.

  8. Bake for 20-25 minutes until lightly browned and toothpick inserted in center comes out dry.
