Recipe Ingredients for Peach Muffins

3 1/2 cups flour
2/3 cup splenda
6 teaspoons baking powder
4 eggs
1/2 cup vegetable oil
1 1/2 cup milk
2 1/2 cups peaches

Recipe Directions for Peach Muffins

  1. Sift together flour, sugar and baking powder. Set aside.

  2. In another bowl, beat eggs until frothy. Stir in oil and milk. Add flour mixture and mix with wooden spoon only until moistened. If pieces of peach are large, break up before stirring pie filling into batter. Do not overmix.

  3. Pour or spoon batter into a 12-serving size greased muffin tin, filling 2/3 full. Bake at 400 degrees for 25-30 minutes. Remove from muffin tin and serve warm or at room temperature.
