Peach Cupcakes with Mascarpone frosting

Recipe Ingredients for Peach Cupcakes with Mascarpone frosting

1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp nutmeg
1/4 tsp salt
1 1/4 cups granulated sugar
1/2 cup margarine
3 large eggs
1 tsp vanilla
2 tsp orange zest
3/4 cup 1% milk
2 peaches
1 lb mascarpone cheese
1/2 cup confectioner's sugar
1 1/4 cup heavy cream

Recipe Directions for Peach Cupcakes with Mascarpone frosting

  1. Pit peaches and slice thinly. Cut each slice into thirds.

  2. mix flour, bakng powder, nutmeg and salt.

  3. in a large bowl, beat with an electric mixer the margarine and sugar until well combined. Add eggs one at a time, beating well after each addition until light and fluffy. Add vanilla and orange zest, beating well. Alternately beat in flour mixture and milk until smooth. Fold in peaches.

  4. Scoop batter into prepared pan, bake in oven for 25-35 minutes or until golden brown.

  5. Let cool in pan on rack for 10 minutes, then remove from pan and let cool completely on rack.

  6. For frosting:

  7. Beat together on high the mascarpone cheese, confectioner's sugar, and heavy cream.
