Crunchy Sweet Salsa Yeilds: 3 cups - serving size 1/4 cup

Recipe Ingredients for Peach and Cucumber Salsa

2 cups peach, diced
1 cup cucumber, diced without seeds
3/4 cup diced red bell pepper
1/3 cup chopped fresh cilantro
2 tablespoons fresh lime juice
2 tablespoons apricot preserves
1 teaspoon chipotle chiles

Recipe Directions for Peach and Cucumber Salsa

  1. Mix all ingredients in medium bowl. Season salsa to taste with salt and pepper. (Can be prepared 2 hours ahead. Cover and refrigerate. Stir to blend before serving.)

  2. Chipotle chiles canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.

  3. Yeilds: 3 cups - serving size 1/4 cup
