To be served either cold or hot with vanilla ice cream. Use a square oven to table baking dish (9"X9").

Recipe Ingredients for Peach Cobbler

3 pounds of peaches, peeled & sliced (3 to 3 1/2 lbs.)
4 tablespoon sugar, super fine
1/2 tablespoon lemon juice
1 1/2 teaspoon cornstarch
1/2 teaspoon vanilla extract (or almond)
1 1/4 cups flour, all-purpose
1/2 cup sugar, super fine
1 1/2 teaspoon baking powder
1/2 teaspoon salt
6 tablespoon butter, diced
1 egg
5 tablespoon milk (1 additional tablespoon if topping too dry)

Recipe Directions for Peach Cobbler

  1. Preheat the oven to 425 Degrees.

  2. Put the peaches into an ovenproof dish that is also suitable for serving.

  3. Add the sugar, lemon juice, cornstarch, and vanilla extract and toss together.

  4. Bake the peaches in the oven for 20 minutes.

  5. COBBLER TOPPING

  6. Meanwhile, to make the cobbler topping, sift the flour, all but 2 tablespoons of the sugar, the baking powder, and salt into a bowl.

  7. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.

  8. Combine the egg and 5 tablespoons of the milk in a pitcher and mix into the dry ingredients with a fork until a soft, sticky dough forms.

  9. If the dough seems dry, stir in the extra tablespoon of milk.

  10. Reduce the oven temperature to 400 degrees.

  11. Remove the peaches from the oven and drop spoonfuls of the topping over the surface, without smoothing.

  12. Sprinkle with the remaining sugar, return to the oven, and bake for an additional 15 minutes, 9r until the topping is golden brown and firm -- the topping will spread as it cooks.

  13. Serve hot or at room temperature with ice cream on the side.
