Recipe Ingredients for Peach Cobbler (Adapted from Dr. Weil)

10 peaches
1 cup sugar
1/2 cup pineapple juice
2 tablespoons cornstarch
4 cups flour
1/2 cup sugar
2 tablespoons cornstarch
1 teaspoon salt
1 1/2 cups soy milk
2/3 cup oil

Recipe Directions for Peach Cobbler (Adapted from Dr. Weil)

  1. Preheat oven to 400F.

  2. Bring all the filling ingredients to a boil in a large saucepan, then turn down heat and simmer until the filling becomes thick. Spoon the thickened fruit filling into 13x9-inch baking or casserole dish, and spread it around evenly until it meets all sides of the dish.

  3. In a mixing bowl, stir together the flour, sugar, conrstarch, and salt. In a separate bowl, whisk together the soy milk and oil. Stir the wet ingredients into the dry ingredients, just until the dry ingredients are moistened. Drop the dough by spoonfuls over the hot fruit. (I use a small ice cream-type scoop).

  4. Bake in the preheated oven for 25 minutes until biscuit topping turns golden brown. Cool for 10 minutes. To serve, scoop out twp biscuits and fruit filling and transfer to a dessert bowl or plate.
