This is from Eating Well Magazine July/August 2008. I made it in my 10" cast iron skillet. Delicious!!

Recipe Ingredients for Peach & Blueberry Cobbler

3 T. unsalted butter
3 T. canola oil
1 cup whole wheat flour
1 1/2 t. baking powder
1/2 t. salt
1 cup 1% milk
1/2 cup raw sugar
1 t. vanilla extract
1 pound fresh peaches
1 cup fresh blueberries

Recipe Directions for Peach & Blueberry Cobbler

  1. Preheat oven to 350 degrees

  2. Place butter and oil in 10 or 12 " cast iron skillet or a 9" x 13" baking dish. Heat in over until melted and fraagrant, 5 to 7 minutes.

  3. Combine flour, baking powder & salt in large bowl. Add milk, sugar & vanilla. Stir to combine.

  4. Add the melted butter mixture to the batter and stir. Pour batter into hot pan. Spoon fruit evenly over batter.

  5. Return to oven and bake until the top of the cobbler is browned and the batter areound the fruit is completely set, 50 minutes to 1 hour. Remove to a wire rack to cool for at least 15 minutes. Serve warm.
