Pea Soup Recipe

Makes 15 servings



Bright Green and pretty clean! Based on an Ina Garten Recipe, but I replaced cream with 2% milk and butter with cooking spray. The recipe also called for mint, but I preferred garlic instead.

Recipe Ingredients for Pea Soup

2 leeks
2 onions
4 cups chicken broth
3/4 cup 2% milk
32 oz. peas
2 tsp. garlic powder
1 Salt and Pepper

Recipe Directions for Pea Soup

  1. Cut onions and leeks into slivers.

  2. Sautee in pan over medium heat (Coat pan with cooking spray of choice.).

  3. Add chicken broth and bring to a boil.

  4. Add peas (I used frozen) and boil for 5 minutes.

  5. Remove from heat, add salt, pepper and garlic.

  6. Puree in a blender 2 cups at a time. When the blender is full, pour into a large saucepan or pot on low heat to keep warm.

  7. Continue until all the mixture has been pureed.
