This meatless and low sodium pea soup is very tasty with just a touch of heat from the pepper.

Recipe Ingredients for Pea Soup, Meatless - judea314

8 cups water
1 pound split peas, dried
7 oz Gimme Lean Sausage
1 tbsp canola
1/3 cup flour
1 onion, large, chopped
1 tsp beef bouillon
1/4 tsp cayenne

Recipe Directions for Pea Soup, Meatless - judea314

  1. Rinse split peas.

  2. Add peas to pot of water, either on the stove or in a crock pot.

  3. Brown sausage with oil and flour. Break into small chunks. Add to peas.

  4. Stir remaining ingredients into the pea mixture.

  5. Bring to a slow boil stirring occassionally until the peas are cooked. Stovetop method takes about 1 hour. Crockpot method will take longer. Use a whisk to stick to help puree the soup.

  6. Adjust the water to get the desired soup texture.

  7. Serve hot. Keeps well in the refrigerator or freezer.
