A light soup made with frozen peas and fresh mint

Recipe Ingredients for Pea Soup GI Jane

1 onion, finely chopped
1 tablespoon olive oil
4 oz new potatoes, chopped
6 oz peas, frozen
1 pint (vegetable) stock
1 tablespoon mint leaves, chopped
1 black pepper

Recipe Directions for Pea Soup GI Jane

  1. Heat the olive oil in a large saucepan and add the chopped onion

  2. Cook for a few minutes until the onion is translucent

  3. Add the potatoes and peas, cover and allow to sweat out the flavours for about 10 mins

  4. Add the stock and some seasoning, bring to the boil and simmer for 10 minutes

  5. Blend and serve with a little chopped mint.
