Pea and Barley Soup - Thick and Satisfying!

Recipe Ingredients for Pea Soup with Barley

1 cup Pearled Barley
13 oz Split Peas
4 oz Smoked Ham Hock
2 medium Carrots
0.5 cup, diced Celery
2 large Onions
32 oz Potatoes, Boiled, Cooked In Skin, Flesh

Recipe Directions for Pea Soup with Barley

  1. This works well in a crock pot. Add chopped onion, carrot, and celery to crock pot set on high. Add pinch of salt and cover. Let this heat together while you prep the other items.

  2. Cube potatoes and add along with peas, barley, and ham hocks. Add 12 cups water and cover.

  3. Cook on high for 4 hours, stirring occasionally. When soup is thick and flavorful, remove hocks and let them cool. Remove the meat and add back to the soup. Serve with multigrain bread for a meal that is high in fiber.
