Recipe Ingredients for PCA CHICKEN ASPARAGUS RISOTTO

6 ounce chicken breast, boneless fat trimmed
1/2 avocado
1 1/2 cups brown rice
1 cup baby spinach leaves
1 tbsp walnuts
1 tsp extra virgin olive oil
8 olives
1 tbsp dijon mustard
2 cups asparagus
1 lemon pepper

Recipe Directions for PCA CHICKEN ASPARAGUS RISOTTO

  1. Directions

  2. Cook brown rice separately.

  3. Cook asparagus in microwave, 6 minutes with mustard.

  4. Tenderise checken breast and fry in olive oil, add lanatan seasoning or lemon pepper to taste.

  5. wshen chicken os almost cooked 2-3 minutes per side, add all remaining ingredients and simmer until warm and spinach is cooked.

  6. Serves 2.
