Pb&J "Larabars" Recipe

Recipe Ingredients for PB&J "LaraBars"

1 cup, pitted, chopped Dates, Domestic, Natural And Dry
1/8 teaspoons salt (1/8 teaspoon)
1/2 cup, whole Almonds
1/2 cup Peanuts, All Types
13/20 cup Dried Cherries

Recipe Directions for PB&J "LaraBars"

  1. Soak the dates in warm water for 30 minutes. Reserve 2 T of the water and drain the rest.

  2. Process the dates, nuts, water, and salt for 2 minutes, scraping the bowl as necessary. Add the cherries, and process for 30-45 seconds more, until almost smooth. The cherries will remain more chunky.

  3. Dump the mixture into a small pyrex, one of those 5 x 8 ones is good. If you don't have one that small, just fill only half of a lasagna pan. Remember to line with foil and spray. Put in the fridge for an hour to firm up, and then cut! Keep them in the fridge.

  4. It'll make 4 regular size LaraBars, or 16 mini ones, like the size of the samples they give out.
