Peanut Butter & Jelly Shortbread Cookies

Recipe Ingredients for PB&J Cookies

1 cup Butter
4 oz Natural
1/2 cup Sugars, Granulated
1 cup Flour
1 1/2 cup All Purpose Flour
1 tsp Vanilla Extract
1/2 tsp Salt, Table
6 tbsp Polaner All-fruit Strawberry Spread

Recipe Directions for PB&J Cookies

  1. Heat oven to 325 degrees.

  2. In a large bowl, cream butter, beat on medium for a few minutes, add in peanut butter about half way through. Beat until light in color and fluffy.

  3. Add sugar and vanilla to creamed butter and beat on medium for about 2 minutes.

  4. Add in flour and mix together until it sticks to itself and balls up.

  5. Make small balls of dough and flatten onto a cookie sheet, make a deep impression in the middle to hold the jelly, don't add the jelly yet.

  6. Bake 8 minutes, take out of oven and add a small dollop of jelly into each impression, push in a little if the cookie puffed up too much. Take care to not push too hard or you'll crack the cookie.

  7. Bake another 9 minutes. Remove from cookie sheet immediately to cool.

  8. Eat and enjoy!
