Modified full calorie recipe for a lower calorie alternative. I had to use sizing's for low fat peanut butter to have the calorie count correct for the PB2 substitution.

Recipe Ingredients for PB2 Cupcakes w/PB2 Frosting - low calorie

1 cup all-purpose flour
1 cup Splenda
2 tbsp sugar
3 1/2 tsp baking powder
1 tsp salt
4 cups Fiber One cereal, crushed to make 2 cups
5 1/4 tbsp Peanut butter (actually 1 cup PB2)
1/2 cup applesauce
1 cup skim milk
2 tbsp skim milk
1 tsp vanilla extract
3 eggs
1/4 cup margarine, at room temperature
2 tbsp Peanut butter (actually 1/2 cup PB2)
3 ounce cream cheese, at room temperature
2 cups confectioners' sugar
1 tbsp skim milk
135 grams (3 pkg) Reese's Peanut Butter Cups (6 total), chopped

Recipe Directions for PB2 Cupcakes w/PB2 Frosting - low calorie

  1. Preheat oven to 375 degrees F if baking with a metal dish; 325 degrees F if using a glass dish.

  2. Sift flour, Splenda, baking powder, and salt together.

  3. Add Fiber One crumbs, PB2, applesauce, milk, and vanilla. Beat mixture with electric mixer on low until moistened, and then beat on medium for 2 minutes. Add eggs and beat for 1 minute.

  4. Line a cupcake pan with papers and lightly spray with PAM. Put batter in each cup to 3/4 full. Bake for approx. 10 minutes. Make sure to check - baking w/Splenda reduces cooking time ALOT. Don't overbake.

  5. For Frosting: Beat the butter, PB2, and cream cheese with a hand or standing mixer on medium speed, until light and fluffy. Slowly add the confectioner's sugar and continue to mix until the frosting is smooth, mix in the milk and continue to mix until it reaches a good spreading consisting.

  6. Frost each cupcake and top with chopped up Reese's Peanut Butter Cups.
