Found this online... was originally a sugar-free vegan recipe... just modified it a bit.

Recipe Ingredients for PB Banana Oat Cookies

0.33 c Skippy Natural peanut butter
174 g bananas (2 medium)
1 tsp vanilla
2 tbsp light vanilla soy milk
2 tbsp Cozy Cottage Maple Syrup, sugar free
2 1/2 c rolled oats
1/2 tsp cinnamon
1/4 c wheat flour
1/4 c applesauce, unsweetened
1/2 c splenda granulated
1/2 tsp baking soda

Recipe Directions for PB Banana Oat Cookies

  1. In a large bowl, mash bananas with a fork until smooth.

  2. Add peanut butter, soy milk, vanilla and maple syrup and mix well.

  3. Add remaining ingredients and stir until well combined.

  4. Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done.
