Recipe Ingredients for Paula Deen's Red Potato Salad

12 cups red potatoes, cubed
1 cup green bell pepper, chopped
1/2 cup red onion, minced
1/2 cup extra virgin olive oil
1/3 cup red wine vinegar
2 tbs dijon mustard
4 tbs fat free mayonnaise
1 1/2 tsp salt
1/2 tsp black pepper

Recipe Directions for Paula Deen's Red Potato Salad

  1. cook potatoes, covered in boiling water, 10 minutes or until tender. Drain well and cool.

  2. In large bowl, combine potatoes, bell pepper and onion.

  3. In small bowl whisk together remaining ingredients. Pour over potato mixture tossing gently to coat. Cover and refrigerate.
