4 tbsp Butter
32 oz Squash, Summer, Zucchini, Includes Skin
3 large Egg, Whole
8 tbsp Light Cream 6% BF
0.125 cup Bread Crumbs, Dry, Grated, Plain
0.5 cup, chopped Onions
1 Teaspoon Worcestershire Sauce
1 serving Hot Sauce
1 tsp Salt, Table
0.125 tsp Pepper, Black
0.25 cup Parmesan, Grated Cheese
0.25 cup, shredded Cheddar Cheese
0.5 cup, diced Ham, Sliced, Regular

Recipe Directions for Paula Deen Zucchini Custard Bake

  1. Preheat oven to 350 degrees F.

  2. In a large saucepan with a tight-fitting lid, combine melted butter and zucchini.

  3. Cover and cook over low heat, stirring occasionally, until tender, about 5 to 7 minutes.

  4. Remove from heat, set aside and let zucchini cool before adding eggs to avoid them becoming scrambled.

  5. Beat eggs with cream; add bread crumbs, onion, Worcestershire sauce, hot pepper sauce, salt, pepper, cheddar, ham, and 2 tablespoons of the Parmesan. Mix well.

  6. Let zucchini cool. Combine mixture with zucchini, stirring until blended.

  7. Turn into a buttered 1 1/2 quart casserole. Sprinkle top with remaining Parmesan.

  8. Bake uncovered for 35 to 40 minutes. If the dish has been refrigerated, allow about 10 minutes longer baking time.
