3.25 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 tsp Nutmeg, Ground
1.5 tsp Salt, Table
2 tsp Leavening Agents, Baking Soda
1 tsp Cinnamon, Ground
3 cup Sugars, Granulated
1 cup Vegetable Oil, Canola
4 large Egg, Whole
0.33 cup (8 fl oz) Water
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.02 cup Lemon Juice
1 cup pieces or chips Walnuts, English
0.5 cup Dried Cranberries
0.25 cup, chopped Pecans

Recipe Directions for Paula Deen Zucchini Bread

  1. Preheat oven to 350 degrees F.

  2. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar.

  3. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice.

  4. Mix wet ingredients into dry, add nuts and cranberries and fold in.

  5. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean.

  6. Alternately, bake in 5 mini loaf pans for about 45 minutes.
