Jane Brody's tabbouli, with my personal additions. Serve with crumbled feta cheese

Recipe Ingredients for Patsy's Tabbouli

1 cup bulgur wheat
2 cups water, boiling
2 tomatoes, finely diced
6 scallions, finely chopped
1 cup fresh parsley, chopped
3 tablespoons fresh mint, chopped
15 oz. garbanzo beans
1/4 cup lemon juice
2 tablespoons olive oil
1/4 teaspoon pepper
1/4 teaspoon oregano
1/4 teaspoon cumin, ground
1 dash allspice
1 dash coriander

Recipe Directions for Patsy's Tabbouli

  1. Soak bulgur in boiling water 1 hour. Drain, pressing out excess water

  2. Add tomatoes, green onions, parsley, mint and garbanzo beans and mix well.

  3. Chill.

  4. Make dressing, combining all remaining ingredients.

  5. Dress salad shortly before serving (less than an hour).
