Recipe Ingredients for Pat's Taco Soup

2 lbs Ground Beef
1 Onions,chopped
4 ounces Chilies, Green,1 to 2 small cans, to taste
5 1/2 cups Tomatoes, Stewed Delmonte
3 1/2 cups Corn, Whole Kernel, not cream, 2 cans
1 3/4 cups Beans, Kidney, 1 can
1 3/4 cups Beans, Pinto, 1 can
1 3/4 cups Beans, Black, 1 can
1 3/4 cups, Beans, White, 1 can Cannollini
5 1/2 cups water
2 oz. pkg. Taco Mix
2 oz. pkg. Ranch Dressing
1 t olive oil

Recipe Directions for Pat's Taco Soup

  1. Due to the analysis formula, I had to break everything down. So just for clarification purposes. Put on your kitchen counter, with a can opener, the following: 3 cans of Stewed Tomatoes, 2 cans of Whole Kernal Corn, 1 can of Kidney Beans, 1 can of pinto beans, and 1 can of Canollini or Garbanzo beans.

  2. After you have browned your meat, onions and mixed in your Taco Mix (I use one hot and one original pkg. McCormick and it makes it pretty warm) and your 2 pks. Hidden Valley Original Ranch Dressing Mix, just start opening cans and dumping them in, do not have to be drained, and then add three cans of water. Keep stirred Bring to boil, cook 1 hour on low heat and you are done. For a crowd??? YOu can't beat it. Everyone raves. Original instructions follow in the analysis format.

  3. In the biggest Stainless Steel Pot you have in the kitchen, sauté onions, add meat and brown, add Dry Taco and Ranch Dressing, stir and mix well over a medium heat.

  4. When dressings are thoroughly mixed in meat and onion mixture, just whack open the tin cans and start adding to the pot (do not drain vegetables), then add water to what little room you have left in the pot. Simmer for 30 minutes to an hour, stirring frequently, because it has a tendency to stick to the bottom.

  5. I serve with any stringy white cheese grated on top (Mozzarella, Monterey Jack) with pinwheel avocado slices and a dollup of sour cream in the center, with a squeeze of lime and a twist on the side, if you want to be fancy. Along with lime and taco chips or small individual loaves of bread, usually both. My husband crumbles his chips on top with chopped onions.

  6. Otherwise you can just throw the cheese, sour cream, avocado, chopped onions, chips in bowls, throw the bowls on the table, tell them how you eat it and then let them do their own thing, either way they will think you slaved all day and of course, as with most soups, it is always more flavorful the next day or two or three. Freezes well. But, set it in the fridge the day before you want to use it again and let it thaw in the refrigerator. ENJOY!

  7. This makes a full 8 quart pot and I do mean full.
