Great combination of greens, tomatoes, diced cucumbers, feta cheese, and chopped green onions.

Recipe Ingredients for Pat's Salad 01

1 cup Greens
1 scallion
1 cup cherry tomatoes
1 cup cucumber
2 oz feta cheese
1 tsp oregano
1 tbsp light olive oil

Recipe Directions for Pat's Salad 01

  1. 1. May want to add some arugula - adds a nice kick to the taste.

  2. 2. Cut up the greens (Spring Greens) finer, add arugula.

  3. 3. Finely dice cucumbers and quarter/half cherry tomatoes.

  4. 4. Chop feta cheese.

  5. 5. Dice green onions/scallions - using primarily white/lighter parts of the onions.

  6. 6. Sprinkle with dry oregano.

  7. 7. Add light olive oil.

  8. 8. Mix all ingredients very well.

  9. 9. The salad is even better on the second day.

  10. 10. Enjoy!
