Recipe Ingredients for Patatas Bravas


Potatoes:
1 lb russet potatoes, cubed
1 tablespoon butter
2 teaspoons olive oil
1 teaspoon salt
1/8 teaspoon ground red pepper

Sauce:
1 Cooking spray
2 tablespoons onion, minced
1 garlic clove, minced
1 cup tomatoes, pureed
1 teaspoon ketchup
1 tablespoon paprika
1/4 teaspoon Tabasco sauce
1/4 teaspoon ground thyme
1 tablespoon mayonnaise

Recipe Directions for Patatas Bravas

  1. To prepare potatoes, place potato cubes in a medium saucepan; cover with water. Bring to a boil. Cook 1 minute or until crisp-tender; drain well.

  2. Heat a large nonstick skillet over medium-high heat. Add butter and 2 teaspoons oil to pan, swirling to coat bottom of pan; heat 30 seconds or until foam subsides. Add potato to pan; sauté 8 minutes or until browned, stirring twice. Stir in 1/4 teaspoon salt and 1/8 teaspoon red pepper; sauté 1 minute. Remove potato mixture from pan; keep warm.

  3. To prepare sauce, coat a small saucepan with cooking spray and heat over medium heat. Add the onion and sauté until soft. Add teh garlic and sauté 30 seconds. Add tomato puree, ketchup, paprika, Tabasco sauce and thyme, stirring well. Remove from heat and stir in mayonnaise. Season with salt and pepper to taste. Serve with potatoes.
