A great greek casserole, made with ground turkey in place of lamb.

Recipe Ingredients for Pastitsio

1 1/4 lbs lean ground turkey
1 1/2 cups eggplant, cubed
14 1/2 oz diced tomatoes
1 medium onion, diced
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
2 tsp garlic
1 cup elbow macaroni
1 egg white
1/4 cup grated parmesan cheese
2 tbsp milk, 1%
1 cup milk, 1%
1 tbsp cornstarch
2 tbsp parmesan cheese
1 egg, beaten

Recipe Directions for Pastitsio

  1. Heat oven to 350 F

  2. Pasta mix: Cook & drain pasta as directed. Then add egg white, 1/4 cup grated Parm, & 2 tbsp milk

  3. Meat Mix: Meanwhile, cook turkey in skillet over med heat until done. Add eggplant, drained diced tomatoes, onion, salt, cinnamon, nutmeg & garlic

  4. Sauce Mix: In a small sauce pan, cook 1 cup milk & cornstarch over med heat. Stir constantly until it thickens and boils, then add 2 tbsp Parm & 1 beaten egg.

  5. Place 1/2 of pasta mix at the bottom of a 2 qt casserole dish. Then layer all of the meat mix, and top that with remaining pasta mix. Then top with the sauce mix.

  6. Bake 40 minutes.
