The Americanized version of Puerto Rico's Plantain Lasagna

Recipe Ingredients for Pastelon

3 tbsp oil
6 plantains
1 lb ground beef
1 cup cheddar cheese
6 oz tomato juice
2 tbsp olives
1/2 cup onion
1 egg

Recipe Directions for Pastelon

  1. Heat 1 tbsp of oil in a deep pan.

  2. Add sliced onion into pan and sautee.

  3. Add ground beef, olives and seasoning (I use adobo) and brown. Set beef aside.

  4. Add. 2 tbsp oil into deep pan.

  5. Slice ripe plantains then drop into hot oil.

  6. Fry until slightly browned.

  7. Line bottom of a square oven-safe dish with half of the fried plantains. Smash the plantains a little once their lined up.

  8. Add in beef on top of plantains as the second layer. Sprinkle cheddar cheese over beef.

  9. Beat an egg with a sprinkle of water and pour over the dish.

  10. Add remaining plantains as the final layer.

  11. Bake for 25 minutes at 375 degrees.
