Pastel De Choclo Recipe

Recipe Ingredients for Pastel de Choclo

2 cups frozen corn, thawed and drained
1 tsp cinnamon
1 tsp salt
1 1/2 tsp sugar
1/3 cup whole milk
2 large eggs
1 tbsp butter
1 tbsp olive oil
2 cups yellow onion, peeled and chopped
2 cloves garlic, minced
1 lb ground beef
1/2 cup black olives, opitonal
1/4 cup raisins
3 tbsp fresh basil, chopped
3 tsp cumin
1 tsp paprika
1/2 tsp salt
1 oz can tomatoes, drained
1/4 cup fresh parsley, chopped

Recipe Directions for Pastel de Choclo

  1. Preheat oven to 350 degrees F.

  2. Place the 1 cup corn, cinnamon, salt, sugar, milk in the bowl of a food processor fitted with a metal blade, and blend to a wet paste.

  3. Place the corn mixture in a saucepan, and cook over medium heat, stirring constantly, until the mixture is cooked to mashed-potato consistency, about 10 minutes.

  4. Cool the corn mixture slightly, and whisk in the beaten eggs and add 1 cup whole corn.

  5. In a large saute pan, melt the butter with the olive oil over medium-high heat. Add the onion, and cook for about 10 minutes. Add the garlic, saute 1 minute.

  6. Cruble the ground beef into the onions. Add the olives, raisins, basil, cumin, paprika, and salt. Saute until the meat is cooked, stirring occasionally, for 4 to 5 minutes.

  7. Add the tomatoes.

  8. Lightly butter a 9x9 baking dish. Spread the ground beef mixture on the bottom of the dish in an even layer. Spoon the corn mixture on top. Bake in the oven until th ecorn topping is golden brown, 20 to 25 minutes. Cool slightly before serving. Cut into squares. Sprinkle with the chopped parsley.

  9. Serve with pico de gallo sauce and brown rice.
