This recipe is of course, slightly altered. I used whole wheat pasta (penne) for this, organic half-and-half in place of cream, and romano cheese instead of parmesan (because that's what was in my refrigerator). Turned out pretty darned yummy. Oh, and while it may be labelled Italian, it's actually Roman. :) From the Three Ancient Cuisines cookbook.

Recipe Ingredients for Pasta with Zucchini (Frugal Gourmet)

4 cups whole wheat pasta, cooked
3 oz pancetta, cooked
1/4 cup olive oil
2 tsp garlic, minced
1 1/2 lbs. zucchini, julienned
1/3 cup half and half
10 g pecorino romano cheese, freshly grated

Recipe Directions for Pasta with Zucchini (Frugal Gourmet)

  1. Cook pasta according to package directions.

  2. Cut up pancetta and fry in a large saucepan, cooking until fat is clear. Remove pancetta from pan, and remove fat from pan.

  3. Add olive oil to pan, then cook garlic briefly. Add zucchini and cook until zucchini is tender, but not mushy. Add half and half, letting heat slightly. Toss hot pasta with zucchini mixture, adding pancetta and topping with romano or parmesan.
