Recipe Ingredients for Pasta and White Bean Casserole

8 ounces rotini pasta, whole wheat
1 lb ground turkey, low fat
1 diced small onion
2 cup chopped kale
1 tsp dried sage
1 tsp dried tarragon
15 oz chopped tomatoes
1 1/2 cup low-sodium chicken broth
15 oz white beans
4 tbsp plain bread crumbs
4 tbsp Parmesan cheese

Recipe Directions for Pasta and White Bean Casserole

  1. Prepare pasta according to package directions, undercooking by 3 minutes; drain.

  2. Preheat oven to 350 F.

  3. Crumble turkey into a large skillet and place over medium heat. Cook, stirring occasionally, until turkey is cooked through, about 4 minutes. Pour off all but 1 tablespoon of the drippings in the pan.

  4. Add onion, kale, sage and tarragon to the pan. Cook until vegetables are soft, about 4 minutes.

  5. Add tomatoes and heat to boiling, stirring occasionally. Boil 3 minutes.

  6. Remove skillet from heat and add chicken broth or water, beans and salt and pepper to taste. Stir well.

  7. In a large bowl, combine broccoli and turkey mixture with cooked pasta. Toss well.

  8. Transfer mixture into a 1 1/2-quart baking dish leaving out excess liquid.

  9. In a small bowl, mix bread crumbs and Parmesan cheese and sprinkle over casserole. Bake until heated through in the center, about 20 minutes.
