Recipe Ingredients for Pasta with tuna, pea and pine nuts in homemade tomato sauce

75 grams Tomatoes
99 grams Tuna
14 grams Tomato Puree
20 grams Peas, Green
1 tbsp Olive Oil
1 tbsp Pine Nuts, Pignolia, Dried
1 tbsp Parmesan, Grated Cheese
100 grams Penne
1 small Onions

Recipe Directions for Pasta with tuna, pea and pine nuts in homemade tomato sauce

  1. Put tomatoes in bowl of boiling water for 3 mins, remove and peel.

  2. Heat oil in a pan, sauté onions for 3mins, then garlic for 1min more.

  3. Add the tomatoes, a teaspoon of olive oil and a squeeze of lemon juice, and cook for 10mins.

  4. Add the flaked tuna and stir to combine.

  5. Cook pasta until al dente, adding frozen peas about 3mins before the end of the cooking time.

  6. Drain the pasta and retain some of the cooked pasta water, add a couple of tablespoons of water to the sauce, along with the pasta and peas.

  7. Cook the sauce and pasta for 2mins more.

  8. Season sauce with salt and pepper, and garnish with toasted pine nuts.

  9. Serve with freshly grated parmesan.
