Pasta with Tomato and Almond Pesto Recipe

While we prefer linguine or spaghetti, any pasta shape will work here. You may substitute ^ teaspoon of red wine vinegar and ^teaspoon of red pepper flakes for the pepperoncini.

Recipe Ingredients for PASTA WITH TOMATO AND ALMOND PESTO

1 pound linguine or spaghetti
1/4 cup slivered almonds, toasted
12 ounces cherry or grape tomatoes (about 2 1/2 cups)
1/2 cup Basil, Fresh
4 g garlic clove, minced
1/3 cup extra-virgin olive oil
1 ounce Parmesan cheese, grated (about 1/2 cup),

Recipe Directions for PASTA WITH TOMATO AND ALMOND PESTO

  1. 1. Bring 4 quarts water to a boil in a large pot. Add 1 tablespoon

  2. salt and the pasta to the boiling water and cook, stirring often, until

  3. al dente. Reserve cup of the cooking water then drain the pasta

  4. and return it to the pot.

  5. 2. Meanwhile, process the almonds, tomatoes, basil, garlic, pepperoncini,

  6. 1teaspoon salt, and red pepper f lakes (if using) in a food

  7. processor until smooth, about 1minute. Scrape down the sides of the

  8. workbowl with a rubber spatula. With the machine running, slowly

  9. drizzle in the oil, about 30seconds.

  10. 3. Add the pesto and cup Parmesan to the cooked pasta and

  11. adjust the consistency of the sauce with the reserved pasta cooking

  12. water. Serve immediately, passing extra Parmesan separately.
