125 g spinach pasta
1 1/2 cups cherry tomatoes
2 cups spinach
1/4 cup shallot
1 cup cannellini beans
2 tbsp olive oil
2 tsp brown rice vinegar

Recipe Directions for Pasta tiepida con fagioli

  1. Lightly steam spinach.

  2. Quarter tomatoes and dice the shallot.

  3. Combine spinach, beans, tomatoes, shallot, vinegar, and one tbsp oil. Chill in refrigerator.

  4. Cook pasta, drain, then coat with one tbsp oil.
