Recipe Ingredients for Pasta: Pasta with Summer Squash, Spicy Sausage, and Goat Cheese

1 Kosher salt
8 oz. whole wheat pasta
3 T. extra-virgin olive oil
1/2 lb. turkey sausage (mild or hot) (or 525 cal of cooked chicken apple sausage links, quartered lengthwise and sliced)
1/2 c. shallots or onions, finely chopped
3 c. summer squash (yellow and green), medium dice
8 oz. mushrooms, sliced
3 oz. fresh goat cheese, crumbled (~1 c.)
2 T. fresh flat leaf parsley, finely chopped
1/2 tsp. salt, to taste
1/4 tsp. freshly ground black pepper, to taste
1/2 c. Parmigiano Reggiano, grated

Recipe Directions for Pasta: Pasta with Summer Squash, Spicy Sausage, and Goat Cheese

  1. Add pasta to a large pot of boiling salted water; cook until al dente. Drain, reserving ˝ cup of pasta water.

  2. While the pasta is cooking, heat ˝ tablespoon oil in a sauté pan and cook the sausage, breaking it into small bits with spatula until cooked through. Drain off the fat and reserve the sausage in a bowl. (If using chicken apple sausage, skip this step.)

  3. Heat the rest of the oil in the same pan and sauté the shallots over medium heat until they are soft.

  4. Increase the heat to medium high and add the mushrooms and squash; sauté until just tender.

  5. Toss the sausage into the squash and stir for a minute over medium high heat.

  6. Add pasta and toss with a few tablespoons of the pasta water. Add the goat cheese and parsley and toss. Season to taste with salt and pepper. Mix in grated cheese.

  7. Makes 15 one-cup servings.
