ADD 3/4 to 1 lb. OF CHICKEN SAUSAGE (not in database) USE 3 OUNCES OF GOAT CHEESE (database had a higher calorie/higher fat version than mine - mine is 70 calories/6 grams of fat per ounce)

Recipe Ingredients for pasta with summer squash, goat cheese, and sausage

1/3 cup chopped shallots
2 cups diced summer squash
1 13/20 ounces crumbled goat cheese
1 pound pasta

Recipe Directions for pasta with summer squash, goat cheese, and sausage

  1. cook pasta till just shy of al dente

  2. while pasta cooks

  3. remove casings from chicken sausage and cook, breaking into pieces till almost done

  4. remove from pan, pour out fat.

  5. cook shallots till they begin to soften, raise heat, add squash (half green, half yellow), cook till barely tender

  6. reserve 1/2 cup pasta water and drain pasta, returning to pot

  7. add sausage, squash mixture and 2 tbsp of pasta water

  8. toss until sausage done and pasta perfectly al dente

  9. add pasta water to keep moist as needed

  10. remove from heat, add goat cheese and some parsley, toss until cheese coats the pasta.

  11. Season with salt and pepper

  12. Serve with grated parmiagiano/reggiano (optional
