Pasta Stuffed Shells Recipe

Manicotti stuffed with ground turkey & cottage cheese.

Recipe Ingredients for Pasta stuffed shells

8 tomatoes
1 can tomato paste
1 T basil
1 T oregano
1 salt ,pepper to taste
3/4 lb. ground turkey
14 oz low fat cottage cheese
3 oz. yogurt, low fat
1/4 c. cheese, romano
1 egg
8 oz mozzarella cheese, low fat
10 oz pasta shells

Recipe Directions for Pasta stuffed shells

  1. Bring pot of water to boil. Drop in tomatoes and let boil until skins begin to peel off. Drain. Remove cores and skins. Place back in pot with tomato paste, basil, oregano, salt/pepper. Let simmer for about 2 hours, stirring occasionally.

  2. Brown turkey. Combine cottage cheese, yogurt, egg and romano in blender until smooth. Pour into bowl and mix in browned turkey.

  3. Place layer (about one cup) of pasta sauce in bottom of 11 x 13 pan. Stuff cooked manicotti shells with turkey/cottage cheese mixture. Place in pan. Cover all with more sauce--approximately 2 more cups. Place mozzarella cheese over top.

  4. Cover with aluminum foil and cook in 350° oven for half hour. Remove foil and continue to cook another 30 minutes, or until mozzarella has slightly browned and all liquids have been absorbed.
