Pasta with Spinach, ricotta and sun-dried tomatoes

Recipe Ingredients for Pasta with Spinach, ricotta and sun-dried tomatoes

8 oz part-skim ricotta cheese
16 oz chopped frozen spinach
1 cup onion
1 tbsp olive oil
2 cloves garlic
15 sun-dried tomatoes
1 lb penne
6 oz parmesan cheese
1 Salt and pepper to taste

Recipe Directions for Pasta with Spinach, ricotta and sun-dried tomatoes

  1. Boil water and cook pasta

  2. Saute onions and garlic in olive oil, then add spinach, sun-dried tomatoes, and ricotta.

  3. Toss pasta with sauce. Add parmesan and salt and pepper to taste.
