Pasta with Spinach Recipe

Whole grain pasta with spinach, garlic and parmesan.

Recipe Ingredients for Pasta with Spinach

1 lb whole wheat pasta
10 oz spinach, chopped
1/4 c olive oil
2 garlic cloves, minced
1/4 c sun dried tomatoes
1/2 c water (cooking liquid from pasta)
1/2 c parmesan
1 salt and pepper to taste

Recipe Directions for Pasta with Spinach

  1. Cook the pasta according to package instructions.

  2. If frozen spinach, defrost. Add spinach to pasta when there are 4 mins. left till done.

  3. While the pasta cooks, gently saute the garlic in the olive oil until golden. Add sundried tomatoes.

  4. Drain pasta reserving 1/2c of the cooking liquid.

  5. Return pasta and spinach to pot. Add cooking liquid and olive oil mixture and stir to mix.

  6. Add parmesan, salt and pepper to taste. Serve immediately.
