Recipe Ingredients for Pasta and Spinach Edamame

4 oz fettuccine
2 cups fresh soybeans, shelled
1 tbsp olive oil
3 oz boneless chicken breast, thinly sliced
2/3 cup Italian salad dressing
1/4 tsp ground black pepper
4 cups fresh baby spinach

Recipe Directions for Pasta and Spinach Edamame

  1. In a sauce pan cook pasta and soybeans according until the pasta and soybeans are tender. Drain and return pasta and soybeans to the pan.

  2. Meanwhile, in a large skillet toast walnuts over medium heat for 3 to 4 minutes. Remove from heat: set aside. In the same skillet add olive oil and cook chicken breast in hot oil over medium-high heat until tender for 3 minutes.

  3. Stir salad dressing and pepper into hot pasta mixture in pan. Add spinach, chicken breast and nuts: cook and toss over medium heat 1 minute more. Sprinkle with Parmesan cheese if desire
