Notes: 1 lb of spinach means a large bunch, being about 1 lb before prep. Use mini penne. 1 vegetable bouillon cube = 1/2 teaspoon

Recipe Ingredients for Pasta with Spinach and Almonds

8 oz penne
2 teaspoons salt
2 tablespoons sliced almonds
1 teaspoon olive oil
1 clove garlic
1 lb fresh spinach
3 tablespoons golden raisins
1 vegetable bouillon cube
2 plum tomatoes

Recipe Directions for Pasta with Spinach and Almonds

  1. Prepare penne using 2 teas salt in water

  2. In 12-inch skillet over medium heat, cook almonds until golden, stirring and shaking skillet frequently; remove almonds from skillet

  3. In same skillet, in hot olive oil, cook garlic until golden.

  4. Increase heat to medium-high; add: spinach, Raisins, Bouillon

  5. Cook until spinach just wilts

  6. Drain penne, return to saucepot and add:

  7. Spinach mix, Plum tomatoes

  8. Heat through
