Recipe Ingredients for Pasta with Spicy Shrimp and Sun-Dried Tomatoes

2 tbsp oil, olive
1 lb. shrimp, large uncooked peeled and deveined
2 ounces shallots, sliced (about 4 large shallots)
3/4 cup sun-dried tomatoes
1/2 cup olives, Kalamata pitted
6 cloves garlic, chopped
1 tsp lemon peel, grated
1/2 tsp red pepper, dried
28 ounce can tomatoes, diced and drained
1/2 cup basil, fresh chiffonade
12 ounces pasta, linguine
1 cup feta

Recipe Directions for Pasta with Spicy Shrimp and Sun-Dried Tomatoes

  1. Heat 2 tablespoons of olive oil in a heavy large pot over medium-high heat

  2. Add the shrimp and saute until pink, about 2 minutes.

  3. Using a slotted spoon, transfer shrimp to a bowl.

  4. Add shallots, sun-dried tomatoes, olives, garlic, lemon peel and crushed red pepper. Saute until shallots are soft and translucent, about 4 minutes.

  5. Add canned tomatoes and simmer until sauce thickens, about 3 minutes.

  6. Stir in basil.

  7. Return shrimp and any juices to sauce; stir to heat through, about 1 minute.

  8. Meanwhile, cook pasta in a pot of boiling salted water until al dente. Drain. Add pasta sauce.

  9. Toss over medium heat until sauce coats the pasta. Season with salt and pepper.

  10. Transfer to a bowl and top with your cheese preference.
