Recipe Ingredients for Pasta with Spicy Artichoke sauce

8 oz rigatoni pasta
1 3/10 serving frozen artichoke quarters
1 lb fresh tomatoes, diced
1 med onion, diced
1 cup fresh mushrooms, sliced
1 T fresh garlic, crushed
1 T dried basil
1 T dried oregano
1/2 t cayenne pepper
1/4 t black pepper
1 red bell pepper
2 T lemon juice
1/2 cup Parmesan cheese

Recipe Directions for Pasta with Spicy Artichoke sauce

  1. cook pasta al dente according to package directions, drain well, return to pot, and cover to keep warm

  2. while the pasta is cooking, combine the tomatoes, onion, mushrooms, garlic, basil, oregano, cayene , and plack pepper in a large skillet. Place over medium-low heat, cover, and cook for 10-to 12 minutes, or until th tomatoes are soft.

  3. Add the artichoke hearts, bell peppers, and lemon juice to the skillet mixture. Cover and cook for 2 additional minutes, or until the peppers are crisp-tender. Reduce the heat to low.

  4. Add the pasta to the skillet mixture, and toss gently to mix. Add the parmesan, toss gently, and serve immediately.
