Recipe Ingredients for Pasta shells with ricotta and tofu

8 oz extra firm tofu
15 oz part skim ricotta
6 oz spinach
2 eggs
1/2 cup parmesan cheese
10 oz pasta
45 oz tomato sauce
1/2 cup onion
3/5 lbs mozzerella

Recipe Directions for Pasta shells with ricotta and tofu

  1. Dice onion and any other vegetables you'd like in your pasta sauce. Saute until just beginning to brown. Add tomato sauce and spices. Simmer at least half an hour; longer is better.

  2. Boil pasta shells according to package directions. Drain and run under cold water. Set aside.

  3. Process tofu in a food processor or blender until crumbly; add ricotta and process briefly to combine. Stir in spinach, eggs, and parmesan.

  4. Put a few spoonfuls of sauce into the bottom of a 9x13 pan to prevent sticking. Stuff pasta shells with ricotta/tofu mixture, and lay close together in pan. Top with more sauce, and grated mozzeralla cheese.

  5. Cover with foil. Bake at 325* until mozzerella is melted, and filling is heated through, about 45 minutes. You can uncover the pan the last 10 or 15 minutes if you'd like your cheese to brown.
