Recipe Ingredients for pasta with scallops and spinach in red sauce

1 lb. Thin Spaghetti
28 oz. diced tomatoes
1 yellow squash
1 lb. bay scallops
1 tbsp. olive oil
2 tbsp. butter
2 tsp. oregano
4 cloves garlic, diced
1 tsp. pepper
1 tsp. salt
5 oz. spinach (raw)
1 onion (diced)
5 tbsp. parmesian cheese (grated)

Recipe Directions for pasta with scallops and spinach in red sauce

  1. remove muscle from back of bay scallops, rinse

  2. heat 1 tbsp. olive oil over med. heat

  3. add onions and garlic, saute for 3 minutes

  4. add spices, can of diced tomatoes and yellow squash, bring to a boil then reduce heat to low

  5. slowly add in the spinach, stirring

  6. bring water to a boil

  7. add spaghetti, cook for 10 min. el dente

  8. melt 2 tbsp butter in frying pan over med. heat

  9. add scallops and brown for about 4 minutes or until scallops are crispy on outside

  10. drain spaghetti, put on platter

  11. add red sauce

  12. transfer scallops to plate with slotted spoon

  13. sprinkle top with grated cheese
