Pasta recipe modified from Bon Appetit, January 2006. Makes twelve 1-cup servings. You can use crushed tomatoes in place of the Classico sauce. (Add additional Italian seasoning, sugar, and vinegar, to taste.) You can also substitute all turkey sausage or 8 oz. diced pancetta or bacon in place of all the sausage.

Recipe Ingredients for Pasta: Pasta with Sausage, Tomatoes, and Cream

2 T. olive oil
1/2 lb. sweet Italian sausages, casings removed
1/2 lb. turkey sausages, casings removed
3/4 tsp. crushed red pepper
3/4 tsp. Italian seasoning
1 1/2 c. chopped onion
4 garlic cloves, minced
1 medium zucchini, diced medium (optional)
8 oz. mushrooms, sliced (optional)
32 oz. Classico Tomato & Basil Sauce
1/2 c. heavy whipping cream (half and half works, or use part goat cheese or any other creamy cheese)
13 1/2 oz. whole wheat pasta (farfalle, rotini, penne, or similar)
2 T. pesto sauce, to taste (optional)
1/4 tsp. salt, to taste
1/4 tsp. pepper, to taste
1 c. finely shredded fresh Parmesan Reggiano cheese (optional)

Recipe Directions for Pasta: Pasta with Sausage, Tomatoes, and Cream

  1. Heat oil in large skillet over medium-high heat. Add sausage, and sautÚ until sausage is no longer pink, breaking into chunks, about 5 minutes. Drain.

  2. Add crushed red pepper, Italian seasoning, onion, mushrooms, garlic, and zucchini; sautÚ 3-5 minutes until vegetables are tender-crisp. Add tomato sauce, cream, and pesto. Reduce heat to low; simmer until mixture thickens, about 3-5 minutes. Season with salt and pepper.

  3. Meanwhile, cook pasta in a large pot of boiling salted water until tender but still firm to bite. Drain, reserving 1 cup cooking liquid.

  4. Add pasta to sausage mixture; toss over medium heat, adding reserved cooking liquid by ╝ cupfuls if dry.
