Recipe Ingredients for Pasta with Sausage, Peppers & Tomatoes

1/2 lb. linguine
3 tablespoons olive oil
1 onion, chopped
4 plum tomatoes, chopped
10 oz. Italian sausage
1 red pepper, cut into long strips
1 yellow pepper, cut into long strips

Recipe Directions for Pasta with Sausage, Peppers & Tomatoes

  1. 1. Heat 3 Tbl. olive oil in skillet. Add onion & saute until lightly golden, stirring frequently, about 5 min. Add peppers and continue to saute for 2 min. Add the tomatoes, season to taste with salt and pepper, cover skillet with lid slightly ajar, reduce heat to low and simmer until the liquid evaporates, about 40 min, stirring occasionally.

  2. 2. In small skillet heat sausage and cook until lightly browned, about 6 min.

  3. 3. Cook pasta in 6 qt. boiling salted water until al dente (8-10 min.) Drain and keep warm.

  4. 4. Pour sauce over pasta, toss well & sprinkle with sausage. Serve immediately.
