Recipe Ingredients for Pasta with Sausage and Peppers

1 lb mild italian sausage
2 red bell peppers
1 lb whole wheat spaghetti, uncooked
3 garlic cloves, finely minced
5 1/4 cups reduced-sodium chicken broth
2 tbsp. dried basil or 1 cup fresh
1 oz parmessan cheese, shredded
1 Salt
1 Ground black pepper

Recipe Directions for Pasta with Sausage and Peppers

  1. Place sausage into large skillet with high sides (if in casings, remove and dice). Cook over medium heat 8-10 minutes or until no longer pink, breaking into crumbles with spatula. Remove from skillet and set aside on plate with papertowel.

  2. As sausage cooks, slice peppers into bite size strips, discarding the seeds.

  3. Break the pasta in half and add to skillet. Toast 8-10 minutes over medium-low heat, stirring every 2 minutes with tongs (careful not to burn pasta). Add garlic, broth, peppers and sausage. Bring to boil; cover, reduce heat and simmer vigorously 5-6 minutes or until pasta is tender.

  4. When pasta is tender, remove from heat and add half the basil and season with salt and pepper to taste.

  5. To serve, transfer to serving dish and garnish with remaining basil and shredded cheese.
