A vegetable rich sauce low in calories high in vitamin C and vitamin A

Recipe Ingredients for Pasta sauce - vegetable

200 grams carrots
800 grams canned tomatoes
1 clove garlic
1 T balsamic vinegar
1 medium onion
10 grams Parmesan cheese
50 g celery

Recipe Directions for Pasta sauce - vegetable

  1. Chop all ingredients to a chunky stage

  2. place all ingredients in a saucepan, simmer until thick

  3. Place in a food procesor and whizz until desired texture.

  4. ( butter and cheese can be omitted for a single serve to be below 50 calories.) This is a generous sized serving.

  5. with 1 cup of cooked pasta this is a 300 calorie meal.
