A tangy, tasty, hearty spaghetti sauce, vegetarian, but meat can be added easily. Very good served over cooked pasta!

Recipe Ingredients for Pasta Sauce with Eggplant, Red Onion & Mushrooms

1 cup chopped Red Onion
4 cup, cubes(82 g) Eggplant
1/2 cup chopped raw Baby Bella Mushrooms Packaged
1 tbsp Parsley, Dried

Recipe Directions for Pasta Sauce with Eggplant, Red Onion & Mushrooms

  1. Directions

  2. 1. 2 1/2 cups Pasta (Meijer Gold Sun-Dried Tomato jarred pasta sauce)

  3. 2. 4 cups chopped or sliced eggplant

  4. 3. 1 cup sliced baby bella mushrooms

  5. 4. 1 cup chopped red onion

  6. 5. 1 tbsp parsley

  7. 6. Season the slices of eggplant with seasoned salt, basil, parsley, thyme, oregano and fennel

  8. 7. Sprinkle a little chipotle or black pepper on them, too.

  9. 8. Liberally spray a large skillet with canola non-stick and saute the eggplant slices on medium heat until they start to become tender and translucent.

  10. 9. Add onions and saute them until translucent, as well.

  11. 10. Last, add mushrooms and 1 tbsp dried parsley flakes.

  12. 11. Stir in 1 jar (about 2 1/2 cups) of pasta sauce (Meijer brand "Gold" Sundried Tomato flavor is good)

  13. 12. Simmer all and taste--adding more herbs (basil, etc.) to taste, if desired.

  14. 13. This recipe makes 4 1/2 cups or 9 half-cup servings.

  15. 14. Serve over cooked pasta of choice.
