Pasta with Sardines Recipe

Recipes I've seen for this originate in Sicily. They also brown breadcrumbs with the sardines, and leave out the tomato sauce. If you really like sardines, you'll like this dish!

Recipe Ingredients for Pasta with Sardines

8 cups whole wheat macaroni, cooked
1 tbsp olive oil
8 oz frozen broccoli cuts
8 oz frozen peas
8 oz sliced mushrooms
4 cups raw baby spinach
1 tsp. basil
1 tsp. oregano
1 tsp. black pepper
1/2 cup shallot, sliced
2 tsp. minced garlic
240 grams mediterranean style sardines
24 oz four cheese pasta sauce
3 oz red wine
1/4 cup grated parmesan cheese

Recipe Directions for Pasta with Sardines

  1. Put the pasta in a large pot on medium heat.

  2. Heat a large, nonstick frying pan to medium-high heat, and add half the olive oil.

  3. Add the broccoli, peas, spinach and seasonings to the pasta, and stir. Cover and let warm.

  4. When the pan is hot, add the shallot and garlic.

  5. When the shallots begin to sweat, add the sardines.

  6. Once the sardines are beginning to heat, add the mushrooms.

  7. Saute for 5 minutes, then add pasta sauce and red wine.

  8. Cover and let simmer for another 5 minutes.

  9. Stir the cheese and remaining olive oil into the pasta.

  10. To serve, lay pasta mix into a bowl, then ladle the sardine and sauce mixture on top.

  11. Garnish with fresh parsley or extra parmesan, if desired.
