Nice, quick and filling pasta dish with heart-healthy salmon. One of my old standbys!

Recipe Ingredients for Pasta with Salmon, Broccoli, Zucchini & Marinara

8 oz whole wheat penne
2/3 lb salmon
1 clove garlic, minced
1 zucchini, cubed
1 1/2 cup broccoli
1/2 cup onion, chopped
1 tablespoon extra virgin olive oil
1 cup marinara sauce
1/4 cup parmesan cheese, shredded
1 dash pepper
1 dash salt

Recipe Directions for Pasta with Salmon, Broccoli, Zucchini & Marinara

  1. Preheat oven to 400. Rinse fish, pat dry and place in a glass baking dish. Squeeze a little lime juice over fish.Sprinkle with a dash of pepper and salt or an everyday seasoning. Place in the oven for 25-30 minutes or until fish flakes easily.

  2. Meanwhile bring a pot of water to boil. When water is boiling, drop broccoli in and blanche for about 3-5 minutes or until broccoli turns bright green. Remove with a slotted spoon and set aside.

  3. Return pot to boil, drop pasta and boil according to package directions. Drain, return to pot and cover to keep warm.

  4. While pasta is boiling, heat oil in a small skillet. Add onion and stir. Add garlic and stir until fragrant. Add zucchini and saute about 8-10 minute or until zucchini about done. Add broccoli and toss to coat.

  5. Combine veggie mixture with pasta and toss with marinara sauce and cheese. Serve topped with salmon.
