You can add chopped black olives if you like them... and increase the feta cheese if you like also. Simple pasta salad with any type pasta.

Recipe Ingredients for Pasta Salad I

2 tablespoons olive oil
4 garlic cloves, minced
4 oz pasta, dry
15 oz. tomatoes, diced
1/2 red bell pepper, diced
1/4 cup onion, chopped
1 tbsp. red wine
1/4 tsp. crushed red pepper flakes
1/4 cup finely chopped fresh parsley
1 tsp. dried oregano
2 T crumbled feta cheese

Recipe Directions for Pasta Salad I

  1. Bring a large quantity of water to boil in a stockpot. Meanwhile, heat the oil in a small saucepan over medium-low heat.  Add the garlic and cook 30 seconds; do not let it get at all colored.  Remove the pan from the heat and set aside.

  2. Add the pasta to the boiling water and cook. Rinse with cool water after you reach your desired level of done. Drain thoroughly in a colander and place back in a bowl. Add all ingredients together and toss well.  Chill or serve at room temperature.
